response. I have the Yoshikane Gyuto and absolutely love it. I have a Shun and Miyabi which don't see much work anymore. I was hesitant because I was always told, hlod the knife, test the knife, but sometimes life isn't ideal. So, since I didn't have that chance, I compared the measurements (e.g. dimensions and weight) and asked myself, what do I like about my knives and what would I change if I could. I prefer the thinner blade of the Miyabi, but it 's a bit heavy. The Shun (which was my first) was tough, but really heavy. My biggest hesitation, was the handle....what if. I spoke with epicurean edge and placed my order. Would do it again in a blink. Find out what you like and don't if you don't have the chance to try it (for me, no local store offers this quality) and why not pick up the phone and talk to them. Just food for thought.

I've used my friend's misono once when I was cooking at his house and it's like the most awesome thing ever. I think i've seen a long slicing misono in some of the chefsteps videos as well but i don't really know if it is.
