I've been looking at where to source these from, does anybody have any idea on where / brand ? I would also be interested in the same in stainless to compare. Something similar to the ones used in the videos.

Any restaurant supply store will carry them you could try somewhere like webstrauntstore.com or katom.com or foodservicewarehouse.com. The polycarb ones I use at home are winco brand I believe and are sturdy and relatively cheap. Stainless gets more expensive though.

On a bit of a side note... does anyone recommend a size of container when only cooking for one or two? I would hate to fill such a large container if I don't need to.

I have a full size container for big proteins and large groups and then i have a 1/3 size container I think, same opening dimensions but just more shallow, something like 6".
