Will the Joule stay on the entire day? For example, if it finishes cooking, will it stay on until I get home? Or shut off a few hours after finished cooking.

All circulators are designed to stay on until you turn them off. You'll be able to keep running Joule after it's done cooking, and will be able to remotely drop the temperature so that you don't overcook your meal.

for food safety, one would never want to the circulator/heater to turn off until such time as you can immediately tend the food, either by finishing/serving or ice water bath/ into the fridge. If it were to turn off and hours pass with the food slowly going to room temperature, you'd no longer be looking at food, you'd be growing dangerous biota
