This is the one I'm currently looking at to buy, also gives you an idea of price range. Would love to hear any suggestions for other peoples favourites or recommendations. Rest of my knives are miyabi/shun premier

Are you using this as a centrepiece when serving?

If not, what about the Fujiwara sujihiki, MoV stainless mono steel construction, good fit and finish, comfy handle and pretty cheap. Obviously not as beautiful as the knife you're looking at but totally serviceable.
