at work I have been making a block of infused heavy cream with 1.5% kappa carrageenan. I must then let it set. After this I have to chop it into small pieces and blend it To make a gel. The problem is that it sets back up into a gel in the fridge. My boss said that I didn't blend it long enough and that I've had to split and come back together . however when blended longer it's split and never came back together . Can anyone offer any insight into this ? Help would be greatly appreciated because this is been very difficult
