Nice to see someone from your part of the world....and with your expertise.

I am particularly interested since while I eat a significant amount of Chinese traditional cuisines, it is also the cuisine I am likely the least knowledgable in. Perhaps you might be able to help me learn more about your areas of expertise? I also have a basic question for you. Are you familiar with how a kitchen is organized in western cuisine? If so, can you help me understand the structure of Chinese professional kitchen brigade?

Separately, I also have a strong desire to understand haute/modern Chinese cuisine as it is something I have little exposure to.
