Other Carbon Steel Pans

Everyone is all in on the Darto pans, and that's fine and dandy. I'm curious if anyone has any experience with other brands? America's Test Kitchen did a test some time ago, and that was informative. But there's one brand in particular that I'm looking into, the Mauviel M'steel series. I like Mauviel cookware, but it's waaaaaay outta my price league. However, their carbon steel pans seem reasonable.

I have a tough time believing Mauviel cs pans would be much lesser quality than Darto. It may come down to sizes, steepness of sides (like mentioned in the video) etc. FWIW, I still prefer my cast iron for searing over my Darto. But I am weird.

My general impression is that carbon steel pans all perform more or less the same, provided that they're roughly the same thickness. There are differences in form factor owing to handle design and how sloped the sides of the pan are, but these are things you can judge pretty well just by looking at the pan.
The big draw of the Darto to me was that it's a single piece of metal without any rivets or joints. I freaking hate rivets and joints on cookware... they're close to impossible to get completely clean. I'm pretty sure I would have been (close to) just as happy with pans from other manufacturers. Unless you're in love with a particular model, buy the cheapest thing that looks good.

We went induction and gave all of our non-induction cookware to a friend, a few months ago, so I am rebuilding. Total inventory is: 1 Mauviel 2 Qt, 1 T-Fal, 2 Kuhn Rikon Pressure cookers, 2 cast iron Dutch Ovens and my great-grandmother's warped Griswold. The Darto set seems like a no-brainer, given that we are rebuilding from scratch and have often lamented their shipping costs. I'll book it under the house build. Jen will pass that, right? Right??! Also - No rivets or joints. Awww yis.

Yeah, that's the boat I'm in. Spent years cobbling together Cuisinart cookware from closeout stores like Home Goods and Tuesday Morning and whatnot, only to finally get a Waring induction unit and find that not a single piece actually had a solid stainless core. Meaning no induction. I have like 14 pieces to replace. *sigh*

I totally feel your pain. I gave away a *lot* of very nice European cookware. OTOH, my friend is very happy, and I love my induction. So much so that I am thinking of doing away with the range in the house we are building and doing separate induction burners...

When I went induction to augment my gas range, I lucked out and had some All Clad. I've had them for years and didn't even dream of induction when I bought them.
