Fish free umami powder

I was wondering if anyone had a recipe for umami powder that didnt contain any fish (bonito, anchovies...) Im allergic and always wanted to try it on a burger.

i usually make dashi from scratch but since last yr i started making dashi from powder.
i use Shimaya brand - Jyun Katsuo Dashi and it does not contain any msg. i add a small sachet of bonito flakes though.
over the weekend, i picked the above dashi powder and Konbu Dashi from Shimaya as well which might be of interest to you. i haven't used it but when i do i'll let you know.
both of the above don't contain msg.
or you could make your own... try kelp and/or shiitake mushroom powder?

Powdered dried shiitake mushrooms and kombu are excellent choices, as

says. Depending on the application, other good sources of vegetarian umami: tomato paste, miso, Marmite, Vegemite - any of which could be dehydrated and powdered if need be. Also parmesan cheese if you eat dairy (and you'll want a non-Italian parmesan analog if you avoid rennet). Obviously if your application is Japanese, you'll want to focus more on the miso and and kombu, while if you are making biscuits and gravy, the Marmite will be a better match.

Asian markets sell vegetarian based dashi powder, look for the Aginomoto company brand. They are also the producers of japanese style MSG and transglutaminase.
