Fermentation Uses for Joule

I would like to use joule for fermentation control, such as cheesemaking, what is the lowest temp joule is designed to work -- presumably with the same accuracy? . . . The other options in this class seem not to have been designed with fermentation control in mind.

There are a few of us interested in the fermentation application. This may be limited in part by room temperature as it is not a cooler but rather any temperature above room temperature could be chosen in theory.

It works great for cheese making, yogurt fermentation, chocolate tempering etc... As @Todd_Shewman_38102 said just not cooler than ambient air, (without ice in the water). The temperature range is room temperature to 208° F (98°C) and accuracy throughout the range. Grant has a recipe for making cheddar cheese curds and one for yogurt.

If I recall, the fly in the ointment there may be control of humidity (at least for cheese). In these cases a dedicated room with high humidity may work better. Still work/thoughts in process.

Sous vide is great for making cheese, I've made cheese for years and it makes things so much easier. Here is a pic of the cheddar I made a few weeks back.
