A quick question: I found that most ice-cream in your website were made by pacojet. How can I make one without machine at home?

There are a variety of recipes/techniques that illustrate how to prepare ice cream without one of these devices. Dry ice/liquid nitrogen and a stand mixer, an ice cream maker available at most department stores, etc. I hope these give you some ideas. Good luck.

I've made ice cream (or sorbets) by 1) freezing the mixture over night (in a sealed sous vide bag, to avoid ice crystals), 2) chop it into blocks, 3) mix it with a food processor with a tool almost like this (

) to get it smooth and then 4) freeze it again.
It's not the best way, but it works. Good luck!
