I have 2 brand new circulators and I am trying recipes that say bring to 95c or 203ish degrees. I can't get it any higher than 72c. Do I need to start it way in advance or is there something I am missing?

Talk to polyscience. There should be no problem keeping those temps. Of course a fitted lid helps.

If not a lid, I use saran wrap (whatever polyfilm will work). It works like a champ!!!
