Vaccum maschine

What kind of vaccum maschine would you recommend for home use? I was thinking of buying the Sous Vide Supreme Vaccum Sealer but after reading som reviews it seems that its a bad choice. Does anyone have any experience with this maschine?

The Supreme cost 250$ in Norway and the Vacmaster VP112 costs 1300$. Can anyone recommend a vaccum maschine thats is good enough for home use with a reasonable price?

The price difference is the same as it would cost me to fly to USA and buy it there... I have to buy it on my next trip. The only problem is that it weighs 26 kilograms!

Is there any kind og ziploc bags that you can recommend and a webshop that i can order from? I'm not sure if I can buy ziploc bags for sous vide in Norway.

Anyone have any insight as to whether the vac master 215 is worth the extra dough and space over the 112?

I am not too concerned about the time it takes to seal, since I won't be doing large scale sealing(only home use basically), but I am concerned about its ability to compress fruits/veg and do vacuum infusion, as well as how well it holds up before requiring servicing(I've heard vacuum chamber machines tend to be a little finicky)

Both work well for the purpose.

I think the 112, 210 have the same pump, 215 has an oil pump.

I've had the 112 since christmas and have had zero problems with it and i use it multiple times a day. The only real gripe I have is that it's slow, takes a full 68 seconds to run a full cycle and seal a bag but that's a small price to pay for the cost differential for a home cook. If the polyscience model or the new minipak looks reasonable I may sell this and upgrade if the price is right.

The VP112 vs. VP210....

The VP210 vs, VP215...

Are the VP115 and VP120 brand new?

I noticed them for the first time a few days ago.

The note on the maintaince might have just swayed me. I don't have the option of the 210 so it's between the 112 and 215 for me.

@brendan does the 112 have a pressure gauge? I'm wondering how you know when to stop the pressure before the liquid starts to boil over

Yup, there's a gauge and you will quickly learn what time intervals equal what pressures. I haven't had any problems with liquids boiling over though, liquids in the bag will bubble but don't move towards the sealing bar and if you start with cold fluids it's not a problem at all.

With the 215 you can pretty quickly boil over and have the liquids moving towards the bar.

You need to keep an eye on things there.

The only time I've ever had stuff get really messy is if it's a thick liquid or puree but thin stuff never moves towards the bar. I guess the size of the bag will make a difference too.
