Been working on a (Booze on booze) fall cocktail I call
"Death by a Thousand Apples"
Apple Simple Spec:

Clarified Apple Juice | 500g | Clarify your own or just use whatever is clear |
White Sugar | 500g | brown muddies the cocktail. |
Malic Acid | 2g | played with this a lot - this the sweet spot. |
Salt | a pinch | |
Cocktail spec:

Cachaca (unaged) | fat .25 | I know.. it weird. |
Clarified Apple simple syrup | .50 | |
Dry vermouth | .25 | |
Fino sherry | 1 (tsp) | |
saline solution | 2 drops | |
Fall Spices | Grated | CS Sweet spice is killer here! |
(stir and serve over a big rock )
I've tried to omit the dry vermouth for the sherry, then the sherry for the dry vermouth. it just taste off.
This weekend im going to try swapping them both out for Suze.
If anyone has opinions on how to simplify this spec (after you try it) im all ears!
