I tried that once but found the chocolate never really got thin enough to pour well (I was trying the homemade Twix cookies). Also what do you do if you want the tempered chocolate for coating candies, ie you need to dip in the tempered chocolate? Once you go from bag to bowl it won't stay tempered long, right?

You can place the bowl in the sous vide water to get it up to temperature, then put the chocolate in the bowl, just be very careful not to get water in the chocolate or it will seize. The chocolate once in temper is in temper it does loose it's temper. Just maintain 90°F and you should be able to coat candy, etc. Or I have used an electric hot pad to maintain temp to enrobe candy.
