Restaurant quality cookware yay or ney??

What do you guys think?
Looking at building my own set with stuff like this. All stainless steel with a aluminum core. Not rich enough to go all clad because I'm Canadian and everything costs more up here

Be wary of aluminum core. Over the past five-six years I've built up a collection of maybe a dozen Cuisinart stainless steel pots and pans with aluminum cores. When I finally got a Waring induction hot plate, not a single one of the damn things work with. The Waring just beeps at me like I'm an idiot.

Yes All Clad is expensive, but if you want stainless steel that will last and is also induction compatible it is worth it, IMHO.

Going to get one Carbon Steel pan but I also want pans that can take a beating and keep going

As you can see all clad aint cheap, The Thermalloy is alot cheaper can take a beating in a busy kitchen. . . . which is why I know it will last me a lifetime and then some

All-Clad is a good brand but if you are short on money maybe you should try this

cookware set. It's affordable and the quality is quite good.
