I don't know if this will meet your portability requirements, but you might want to check out the "Cajun Fryer" line of products from R&V Works (www.cajunfryer.com). I don't have personal experience with this equipment, but the reviews are generally quite good and the prices seem to be reasonable given the functionality. The fryers are heated with side-mounted burners that are offset from the bottom of the oil reservoir. This gets you a real cold zone at the bottom of the fryer that mitigates scorching of particles coming off your fried foods, and less scorching means your frying oil lasts longer. System capacity ranges from 2.5 gal of oil (estimated heating time: 12-14 min) to 17 gal of oil (estimated heating time: 16-18 min).

Upvote, Those little countertop jobbies just don't hold temp very well, and they're slow to recover after adding food.

I ended up buying the Waring TF250 Electric Digital Rotisserie Turkey Fryer and Deep Fryer Steamer. The capacity seems sufficient for my needs. Clearly my two biggest concerns are high temp and recovery. ATK rated a waring fryer as the best; hopefully this one will do the job. I'll let you guys know.

I've heard nothing but good things about the Cajun Fryers. They're the closest thing to a commercial deep fryer in a sorta-portable pro-sumer format. If you want to do extended fry sessions in large batches, it's pretty much the only way to go. I'm going to get one eventually, when space and budget (and the wife) permit.

That Waring looks pretty serious. I wish it had a cold zone (for the reasons Matthew Hall outlines below) but it seems like a very good 120V electric unit. Let us know how you like it after you've put it through its paces!

This model definitely lived up to and exceeded my expectations. It's the perfect size for large dinner parties/small events. I was very impressed with its overall integrity; structurally it feels well built. The capacity is perfect. I was able to easily fry 25-30 wings at once, with some stirring with my spider. It didn't feel over crowded. The temp maintained an even 375 the entire time. I felt no major drops. The results were fantastic. I did two portions of the CS wing recipe a couple nights ago, the fryer just plowed right through with zero problems. An extremely nice post usage component is the oil drain / nozzle, which easily allowed to drain oil into a large with zero hassle. Will update further as I do other dishes - empanadas next!
