Does anyone have a good recommendation for a good Torch to go with the Joule? I imagine it's needed for many of the chicken and beef recipes to get a good sear after the sous vide cooking.

I have loved the Bernzomatic ts8000 with the Searzall from Dave Arnold & co. lovely sear.

The cheaper option some people go with is the Iwatani, doesn't fit the searzall though. I have the same Bernzomatic searzall set up because I got it as a gift. It's not bad but I don't use it that much tbh

I just use a regular lighter and breath across it...sears the hell out of stuff... for backup I have a Bernzomatic ts8000, no searzall and a good creme brûlée torch...works great for small items

+1 for the TS8000 with a Searzall.....you can always take off the Searzall if you want but IMHO it is the way to go. Love, love mine.

I also have the searzall but lately I find myself using my baking steel for searing steaks. Toss it on bbq at warp 10 for 20-30 min, oil the meat a little, toss it on and create crusties. The searzall is great for winter use and less even/flat surfaces.

Great technique Jeremy....I'll have to give it a try! Less splatter on my cooktop! I usually put in my Darto pan and use the searzall on the top side, give it a quick flip and repeat.

Yeah I used to do that with my lodge but having an open floor plan means all that smoke goes right to my living room detector. I have my 2 year old trained to wave a towel at it when anything starts beeping. Also a nice task for the pizza peel...
the versatility of the searzall is what I appreciate most. Just touching up sunny side eggs. Toasting a slice of leftover pizza. half charring veggies. Good fun!

So I bought an off brand steel. 22x14. Fits my gas grill nicely.
Also is nice and hot. Little discrepancy in heating But I assume due to being like half price of a real one. Also thinner. Still put a decent crust on my hanger steak post sous vide. Wish that cut was a little flatter...hah!
