How to use Joule to cook...?

Hubby like medium steak and I love medium rare. Only ordered 1 Joule, what and how to go about it? Other than cook them separately i.e. two times. Thank you in advance.

Cook them both to the lowest temp, overcook one of them when you finish searing.

Let him taste your medium-rare SV/seared steak and he will never go back to medium....they are VERY different than traditionally done steaks....give him a few glasses of wine first though..;)

You can also cook one sous vide and one in a low temperature oven

Cook first to medium (eg 1 hr depending on thickness). then drop the temp to medium rare. Medium steak will keep warm while you cook other medium rare. When you remove from joule, sear medium rare steak first and leave medium in the bag while you sear the medium steak (or leave both in bag for 5-10 minutes). Then sear both to finish.

's method will work. It just depends on your work flow. Johan's is easier if you just want set and forget it, then just sear one a bit longer. But both methods will work equally well to get the results you want.

I also echo Johan and Todd's suggestions.
If you have a vacuum sealer, another option would be to stock up on steaks when they go on sale and then cook them in two batches at different temperatures. If you cook them until they're pasteurized, they'll last weeks in the fridge (and years in the freezer). Then when you want to serve, you can drop them in the bath at the lower temperature to retherm and then sear them off at the same time. Just be sure to label your batches properly. My wife prefers more well done meat than I do, so this is an easy time-saving way of having two separate donenesses ready to go without having to cook each steak separately right before dinner.

Brandon, that was a "duh" moment for me. I SV cook and freeze all the time and it hadn't even crossed my mind to cook at different temps and then retherm together at just below the lowest doneness. Sometimes you miss the forest for the trees. Thanks!

I use all the time for all the foods you are using for the meal. Frozen sauces ( demi glas for the steak), potatoes, soup etc. Pick the reheat temp as the LOWEST temp that any of the items were cooked at and throw it in the SV bath. Works great with multi course dinners. Just throw everything in Chicken, steaks etc.

What about place them both in a bath set for medium, use a prob thermometer in the medium rare and remove it when it reaches the right temperature and hold it until your hubby's steak is done?
