So...I'm looking for some help with deciding on a good Sous Vide container for Joule when she arrives. I was thinking a Staub dutch oven would be a great vessel, and I love that they are enameled. I was wondering if you agree, or would recommend something else. Also if you do think Staub would be a good choice, what sizes do you like? Currently I only cook for my wife and I, but I have in the past cooked bread in a dutch oven (Tartine recipe). I also thought a large size would be good for large stocks/soups/stews. I could see the need for a couple sizes. I'm hoping you guys have some sizes that you can recommend based on all your cooking experience. There are probably some sizes you use a lot, and some you use very little. Thanks!!!
