Sous Vide Questions from a Newbie

There is information that says you can set up your cook on the app and have the food ready by the time you get home from work. How does this work exactly? If you are cooking meat then how can you leave it out all day at room temperature without bacteria growing until the actual cook triggers at a specific time? Does the Joule cool the water to a safe temperature? Does it cook it immediately and just hold it at the finishing temperature all day? If so, does this break the meat down too much?

I'm not positive, but I believe that the way this would work would be to leave ice in the water bath to keep the meat cold, and then either through a timer or remote control through the wifi connection you tell it to start cooking, and it melts the ice and brings the water up to temp.

@Chris Young has made mention, I don't remember where, of putting the food in a tub of ice. as the ice melts you will have a water bath at roughly 0 Celsius. This would keep the food safe until Joule kicks on and ramps up the temp to cooking range. It has been mentioned Joule can do this pretty quick. @Todd Shewman@Meathead@John Fisher... please confirm. I am dying to see results of such a setup.

So assuming Joule can handle a moderate setup, I believe Chris or Grant suggested 1 degree C per L every 4 seconds or so. And assuming you put enough ice to leave a minimal amount remaining by the time you kick Joule into gear, no problem. Low temp proteins cooked entirely remotely.

food for thought: it takes a lot of energy to change the temp of water. additional energy for a phase change. what this means for you is the ice water should remain pretty cold all day in an insulated container. when a powerful tool like Joule enters the equation, temps rise quickly. ie only a brief period in the danger zone. good luck and test it out a bit before you try to cook for a dinner party form your cubicle.

1100W output, assuming 95 efficiency (hopefully more), you are looking at 1045J/sec. it would take around 4-5 seconds to heat that liter(kg) of water 1 degree C. phase change is roughly 1/3 second for every kg of ice already at 0C. you're looking at maybe 40 minutes for a 12 L bath. very doable.

Joule can do it pretty quick and in theory it should work. I don't think anyone can advocate doing it per se due to potential legal implications but in theory yes it should work.

Here is an article about using the ice delay method. I haven't tried it yet but I can tell you Joule heats water very quickly.
