Sous Vide Eye of The Round

I bought a 6lb eye of the round yesterday still in the packer cyrovac.

What I'd like to do is just toss it as in right into my sous vide supreme for 24ish hours and get in nice and tender.

Any reason to think that the cryovac plastic is going to give me problems?

Anyone ever tried this before?

Yes, and I didn't have a problem. However, with that being said and now with a lot more sous vide experience I would probably open the bag and do a pre-sear. That is just what I like to do. I believe it helps develop a richer flavor and gives me the piece of mind that the exterior of the meat was pasteurized which lessens the chance of a floater due to bacterial growth. You can do it and you will in all likelihood be fine on a 24 hour cook, for a longer cook I would highly recommend a pre-sear.

Great. Thanks John. I agree on the pre-sear but wanted to give it a try with the full on lazy way and just wanted to know if anyone knew if the cryovac packaging would kill me... Since you have tried it and are still around to type I feel more confident now ;-) On with my experiment of turning my $2.25 pound roast into something glorious.

It will turn out great. I've also picked up some cryovaced pork roast at Costco and did those directly in the bag. Grant does bacon that way as well so I think you should be fine.

I do it all the time on pork tenderloins 'cause i'm usually drunk and its just toooooooo harrrrrd to rebag it....but, a pre sear does add some depth to the flavor..and eliminates the possible funk on a long cook...

If you contact the manufacture they will tell you NOT to Sous Vide cook in this type of plastic. These types of packaging plastics contain bisphenol-A (commonly called BPA) and PVC 3 phthalates. These chemicals are known EDCs. When you heat these type of plastics up they leach these chemicals into the food, causing impaired immune function, cancers, early onset of puberty, obesity, diabetes, and among other health risks.

So dude did you not read Angels reply. Just because people have done it and achieved a good result doesn't mean you should do it. And just because other people are willing to have carcinogens leached into their food doesn't mean you should do that either. But hey, if you want to grow a third eye and spend the rest of your life strumming your bottom lip while continually walking in circles whispering good beef to yourself, go ahead. Otherwise listen when people tell you things that will keep you from killing yourself and put it in a safe bag. Why ask the question if you're just going to do what ever the hell you want anyway?
