Juice soft serve

I would like to purchase a commercial soft serve machine and make vegan soft serve from fruit and vegetable juice. I received an email from the soft serve machine supplier saying that this isn't possible and that the machine would break. 

Does anyone perhaps have any information on how to go about it? From what I understand it is in fact possible, just not sure how.

I'm sure it's possible, but you're going to need an awful lot of stabilizers (hydrocolloid gums, thickeners, etc, which are going to depend on the specific juices you're using), and possible the addition of a fat to give it some body, coconut oil, cocoa butter, etc. Water, which is mostly what fruit juice is, will give you ice. With milk based ice creams, you have chains of proteins and fats which will aid in the texture of soft serve, so to mimic that texture, you're going to need to start researching various combinations of thickeners as well as look into adding a fat. As there is not much naturally occurring lipids in vegetable and fruit juice, you're probably also going to need to look into emulsifiers if you do decide that adding fats to your creation is the way to go.
