Got my Joule sous vide circulator via FedEx after 10 months of waiting… (more or very less patiently)!
The set up with either iPhone or Android phone is slick and easy in the Joule.app.
It connects from wherever you have an internet connection. You can set it up, go to work or across town and turn it on from wherever you are, over the internet. And the app confirms whatʻs happening; from the rising heating of the water, to setting the timing of the cook.
IF you decide to do something like the above, make sure you check out the forum on ChefSteps or contact ME. There is trick to leaving this thing alone all day with food sitting in a plastic bag, underwater at temps in between the 40-140F danger zone. There IS a way around this and just requires something like a cooler and a bag of ice.
Anyway, Iʻve been cooking in a large Sous Vide Supreme box for the past year and a half. And I gotta tell ya, this is the bomb!!!

ChefSteps.com. I had heard it said, but couldnʻt quite believe that this little thing could heat water so fast.
Three gallons of water in a plastic container, (Iʻm looking for a Stainless Steel, magnetic, Stock pot to replace this plastic container!), heated up to 149F in 17 minutes!!!
I flattened two skinless, boneless chicken thighs and cooked for a bit over one hour. Then sizzled them in a smoking hot cast iron skillet
for about 30 seconds per side and made some lovely chicken/tomato/mayo toasted sammiches.
HOLY cow!! So delicious. I put fresh ground salt and fresh ground pepper melange on, added a glug of olive oil, and two sprigs of fresh rosemary to the bags. Put a tablespoon in each bag so they wouldnʻt float, and the chicken was juicy, tender, tasty, with a hint of the rosemary. REALLY delicious.
No checking the chicken over and over to make sure it was done but not overdone. JUST perfect at 149F Perfect. Coulda left it in there for a couple more hours, it would never be overcooked!!!
