Fall has arrived

Fall has arrived in the Pacific Northwest. Time for apples, pumpkin everything and baking. The nights are getting chilly. Chilly enough even the last of my carrots want to cuddle, lol. Happy cooking and please post your creations.

I've never seen acorn squash cross sections like that... also just blanched and sealed? My typical cooking method for acorn squash is halved or quartered, and roasted.

I do it that way so I can grill it. Yes, just blanched an seal, except for the beets. I did those in the pressure cooker, iced then vacuum sealed. I did a bunch of corn SV (183°F for 30 minutes) in August when it was fresh, so we can have corn on the cob during the winter holidays, iced and froze it too.
