The Spanish pastry chef Oriol Balaguer has an excellent book, which explains some of the science behind the techniques. The Torreblanca book is also excellent.

It depends on what you consider "Modernist". We think of it as a looking at food and recipes with a scientific method. Pasty industry has been doing that for many, many decades. If you mean specifically hydrocolloids and liquid nitrogen, then Alinea and Ferran collections.
