Joule is great for cooking while away from home. I wanted to have a steak ready when I got home. Before I left I put the vacuum sealed steak in a pot of cold water with my Joule clipped to the side and made sure that Joule was connecter to WiFi.. Two hours before getting home opened my Joule app, set the temp and pushed start button. Came home to a perfectly cooked steak, the only thing left was to sear it in a hot pan or blowtorch. Brushing it with a glucose baking soda solution, 100 g water plus 2--4 g corn syrup, speeds up the mallard reaction so that the steak gets a nice crust in 23-30 seconds on each side.
