What is an example of a food-safe plastic wrap that can be used inside of Sous Vide bags? I know lots of sources for Sous Vide bags themselves, but I am uncertain what would be safe to use inside of the bag. I would guess that your typical Glad ClingWrap might not be designed for extended cook times? Does anyone know of a product that would work for this purpose?http://www.glad.com/food-storage/plastic-wrap/cling-wrap/
The reason for my question is because of the following two points:
In the book Under Pressure, Cooking Sous Vide by Thomas Keller on Pages 39 & 269 recommends that herbs and aromatics should be rolled in food-safe plastic wrap before being added to the sous vide bag. This is done to avoid flavor being stronger in one area of the food.
In the book series Modernist Cuisine by The Cooking Lab in Volume 2, Page 249 it suggests when cooking a tenderloin you can preserve the roundness by rolling the meat in plastic wrap before vacuum packing (and dipping the bags in scalding water).
