ChefSteps used to have a section on their webpage that described, informed, and I think even sold or had links to the tools that they use in their videos. It's actually where I found information on the fish/kitchen shears Grant uses to break down a halibut in one of their earlier videos. I ended up buying those shears and love love love them. Maybe I'm wrong but that section of the page disappeared not long after they started selling Joule. ChefSteps has morphed over the 5ish years I've been a huge fan into a solely sous vide/joule sales machine. I'm not totally complaining here. I've been working with circulators for about eight years, they are a huge part of my work in the kitchen and I love that they are bringing the tech to the masses. However, I feel like they have strayed just slightly to far from their original concept. Again, not really complaining, just pointing out what I've seen over the course of their evolution. I'm not afraid of change, change is good, I encourage it in my kitchen and on my ever evolving menu, but ChefSteps used to be about informing people of ALL aspects of kitchen innovation, ALL sorts of new and cool tools, ALL sorts of new ideas and plating concepts and ingredients usage. It wasn't always just a website dedicated ALMOST exclusively it sous vide and the Joule. If that section on their website still exists and I just can't find it anymore them I will proudly wear that egg on my face. Regardless, to answer your question, I have no idea who the knife maker of the knife pictured above is but its super sexy and it would be nice if ChefSteps slipped back to their roots just slightly and provided that sort of information.

I somewhat agree with you. The angle seems to have tilted. That said, I don't mind some sous vide promotion, particularity in areas other than steak or eggs.

Which picture? Under tools? There are 2 knives there. Fwiw I have the yoshikane gyuto and love it. I have a shun and Miyagi as well (and i like them both) but neither get 1/10th the work my yoshikane gets.

I'm thinking that once the dust has settled and all the hub-bub in getting Joules shipped out the ChefSteps team will get back to "normal". Whatever that is!!

That yoshikane in 240mm with sld core is going for about $440 on jns right now which seems like a bargain compared to a couple other sites. As Todd says along with some other people who recently got one of those .. they're great. It's kinda got that Hattori drill and pound damascus thing going on. Seems like there have been a couple other makers producing black dammy knives lately konosuke, Nigara, and of course Hinora. Anyway I like knives and I'll bet if you grab one of those you won't be disappointed. And welcome to the rabbit hole!!
