Ziploc Slider bags ok?

Hey guys, so my Joule just shipped (YAY!) and in the little email, they recommended the traditional Ziploc bags that you seal by closing the two ends with your fingers. I was wondering if the ones with the slider mechanism are ok too? I've put a picture of what I'm referring to below. Thanks for the help!

It's my understanding that the bags with the slider mechanism are more prone to leakage.

If you don't submerge the bag, it'll be fine. But if you're not clipping the top of the bag to the pot (or whatever) then you should use freezer bags with the double seal. Slider bags tend to leak around the seal. And the normal Ziploc freezer bags are cheaper than their slider bags.

Hi Jessey! Since you don't actually have to seal your bags (and can simply clip them over the edge of your pot or cooking vessel), that shouldn't be an issue!

ChefSteps recommends heavy duty freezer zip-top bags. While the freezer bags definitely loses the 'holiday' flair that those limited edition bags have, they are more sturdy and relatively safe in varying temperatures.

Just to add. If you are cooking above 160°F you need to use vacuum sealing or sous vide bags as the Ziploc seams can fail at higher temperatures.

as John says veggies and such need a vacuum sealer bag and they are really cheap compared to zip locks, Food Saver etc You can just clip these on the side also..

Is there a preferred brand of Sous Vide bags for tasks such as these?

Really any of the vacuum bags will work. I would get some quart and gallon size. I prefer vacuum chamber bags because they are smooth on both sides. Edge seal vacuum bags like Food Saver bags have small ripples that can put little marks in your product. The vacuum chamber bags are a lot cheaper too. But if you have an edge vacuum seeker got with edge sealer bags.

SC Johnson. Here is a copy of their response;

"Thank you for your interest in Ziploc® brand Bags. It means a lot to us that you use Ziploc®; unfortunately, our bags are not designed nor tested for Sous Vide, nor any type of water bath cooking. Even with their 110° C/230° F° softening point, we cannot recommend them for such use. We formulate and test every product for specific household tasks, and can only recommend using them according to their label directions.

They don't say that the bags shouldn't be used for SV, but that they weren't designed or tested for SV and that they cannot recommend using them for purposes they weren't designed or tested for. But from a technical standpoint, there's no reason not to use Ziplocs for lower-temp SV cooking.

Thanks and this helps a great deal. As @Brandon_Byrd_40557 mentions, technically they don't say they can't, they skirt it by saying they can't recommend it. If we look at the temps they use as their reference point, the CS reference point for when not to use them is actually much lower than SC Johnson's reference in their response. I'm not promoting their use for them and use them pretty much only when I travel (stores don't tend to carry recommended SV bags). It's helpful to have all this information so each can make an informed decision. Very much appreciated.

I have used them. They work fine as long as you don't try to over fill them. And you use them at temperatures below 160 °F. Maybe that wasn't what they were designed for but it doesn't mean they won't work.
