Sous Vide Bacon

Tried the CS overnight bacon recipe today. Wasn't worth the effort. No difference in texture/taste, just as easy to cook it from scratch. However, steaks, chicken, eggs and pork belly were great.

Really? I've done the CS overnight bacon trick three times. First time I was gobsmacked on how rich and flavorful it was. Second time...same. Porkie perfection. Third time was as good as the first two times....tender, juicy and so rich one slice sated my appetite. Once in those three tries we had BLT's. To DIE for! I used my own maple cured, hickory smoked bacon, slab style.
SO......Could be the bacon you used? Did you do the 147° for a full 24?

Was quality bacon and I only did it for 10 hours. I had some thick sliced pork belly in the same cook that I used for ramen soup and it was good. Brushed the belly with char sui sauce and cooked at 400 for 20 min and added to soup alongside sous vide ramen eggs. I didn't have any ramen noodles so I tried the angel hair pasta with baking Soda trick. That turned out well.

So you missed out on a pretty significant portion of the cook. 10h vs 24 hours makes a huge difference in collagen breakdown, a little bit of fat rendering / melding and I'd guess flavor too, they will intensify.

It sure doesn't sound like it was your bacon. I sounds more like you just didn't do the 24 hours it needs. I've done at minimum 24 and up to 36 with stellar results. Give a long cook time a try. I think you'll be more than happy!

The recipes just said to overnight it so I put on at 10 pm and took off in am. Next time will try 24 hours. Off to Costco for more bacon.

Next time give it at least the full 24 hours and let us know if that changes your mind.

Thanks to the other commenters for describing the 24h threshold. I have made the bacon using the ~10h time frame and didn't taste the difference. (was it me???) Good thing I have the 2nd bacon package from Costco tucked away in the freezer. These little piggies are going to get a looong bath next weekend.

Unfortunately, the information about 24 hrs/48hrs was at the end of the video. It may be just me, but I don't want to watch a video to get recipe information. If the recipe is written, put it in the text. This is a 1 minute video of Grant putting a bacon package in a cambro with the important information at the end of the video. I don't mind videos if they demonstrate a skill or trick that is hard to describe.
