Very cool. I think you could serve that dish similiar to Baby octopus in Pimentón de la Vera paprika smoke from Cellar de can Roca. You have to scroll to 2004 in the timeline. Baiscally they just cover the bowl with clingfilm, plat on the clingfilm and than punch a hole with a hot needle and fill it with smoke. I know i've first seen this in a video, but i can't seem to find it. ( Maybe one of the havard lectures he did)
Good call. That was one of my inspirations for the dish! I wanted to get the same slight bit of smoke as you ate the dish. Unfortunately, the clingfilm I've got isn't anywhere near strong enough. To improvise, I punched three holes in the bell jar lid. In testing, this worked pretty well. Because the bell jar lids have the ability to pull down when they vacuum seal, the lid would release a wisp of smoke every time you pushed down on the center "button". However, when I plated the dish over top of the holes, they plugged rather quickly. In retrospect, it would have been better to place the holes further to the outside of the lid. This would have lessened the spring effect of the "button", but possibly prevented them from clogging.
This is awesome! Thanks for the share. Have you ever tried filling the jars with smoke and placing them atop the lids (mouths down)? So like, you lift the jar offs the lids when you want to eat and the food gets more contact with the smoke.
