Go to the Recipe: Warm Carrot Salad With Yogurt, Cilantro, and Mint
I made this dish last night and it turned out great!
When we have not got a microwave oven. Is there any alternative with sous vide or pressure cooker ?
Is it safe to use plastic wrap? It would not melt? What the plastic wrap is suitable for this?
Any standard supermarket cling film, glad wrap, plastic wrap is fine. It doesn't melt. In fact it doesn't seem to heat up directly in the microwave, just via the heat from the steam. If you read the packaging it will likely say microwave safe. I did read somewhere a long time ago that the plastic wrap shouldn't directly touch food while cooking in the microwave. My packaging in Australia says do not use in microwave with high sugary or fatty foods.
You could steam over boiling water using a steaming basket or strainer
The Chaat Masala is sprinkled over? The yoghurt is just plain (Greek) from the refrigerator?
Hi René, You can sprinkle it over or mix it in. Watch Grant make it his way on this episode of Tested!

It works great with sous vide: https://www.chefsteps.com/activities/sous-vide-carrots
Thanks for this, Jess. And now for a question for the Minutiae Dept: This recipe says 90 seconds, but that Grant guy in the video (who's he?) says 60 seconds. 'Zup with that?
what is the recipe for the chaat masala?
What is the weight of 6 carrots? The carrots I use vary so much in size that I am unsure how many of my carrots to use.
Chaat Masala is something you buy - https://en.wikipedia.org/wiki/Chaat_masala
Would this work as a side dish for scallops? For what else?
Honestly, it's going to depend on your microwave. The one we have in the kitchen is really quite speedy. I've made these at home and it takes between 90-120 seconds.
I think the plastic wrap needs to be made of high or low density polyethylene and polypropylene.
surprised, and a bit dismayed you're using a nuker.
Microwave is just another tool useful in the right context. There are lots more modern tools that people have no trouble embracing. For precooking without making veggies soggy, it works really well and faster than you expect so err on the side of underdone.
What was the brand of yogurt they used in the video? It looked so rich and creamy. I've tried so many and none looked as good as the one he used. Please share!
Why?
Wowwww this is good. But what is Chart masala
Just wonderful. A really delicious change for the humble carrot.
I enjoyed this dish, particularly thanks to some awesome rich Greek yogurt I found that really kicked it up a notch.
However, instead of fooling around with microwave times, I cooked the carrots as I usually do: peal and cut in half lengthwise, then in half crosswise, vacuum pack and sous vide 194°F x 15 min. Then I put them in an ice bath to stop cooking and later reheated just before serving at 176°F x 5 min (since I was sous vide cooking meat at that temp). Threw in a few toasted almonds because I had them.
Be liberal with the chaat masala. Didn't add the full amount of lime juice, but I might try upping that next time.
BTW, there is also a video of Grant's microwave technique here:

Very helpful. Thx for sharing.
For those noticing all the tested links don't work. Here is the video on youtube: https://www.youtube.com/watch?v=R14UXLcrduY
