I will waffle ALL of the things!
I love you guys
All your waffles are belong to us.
This is great! Science at work. I love using small appliances for their unintended purpose.
I see a great "will it waffle" series coming out of this ;-)
Once a week with whatever leftovers y'all have in the fridge perhaps?!
Best thing I've seen all day. Trying this on the weekend.
Ive waffled my cookies before but theres some stuff here I hadnt thought of
Hmmmm. Strawberry shortcake could be improved by a trip through the waffle iron, with a nice low-sugar, cream-based strawberry compote for a filler. Gotta try that.
BTW, how did the brownies turn out?
Ii will not waffle when I considering running anything through my iron.
That would be so enjoyable to watch! This one was great.
Which waffle iron is that?
1 more that works very well; Gui Chai) Chinese Chive Dumplings
Ingredients:
120 ml (1/2 cup) water
60 ml (1/4 cup) vegetable oil
60 ml (1/4 cup) tapioca flour
60 ml (1/4 cup) sticky rice flour
1 tablespoon soy sauce
240 ml (1 cup) rice flour
480 ml (2 cups) Chinese chives, sliced
NB: sift the flours & cook until just done, Thai prefer fried & Chinese prefer steamed, use best Garlic chives.
Fry in a little Peanut or corn oil.
Using Waffle iron, aim for crisp but chewy, ripping bits off to dip ( Don't Binge! they will clog up your pipes!)
Near my house selling on the street 20 years
Method:
Add rice flour, sticky rice flour and water to a pot over medium heat. Stir constantly to prevent sticking. If the mixture starts to be too sticky to handle, lower the heat. Stir until the mixture turns gluey. Remove from heat and add the tapioca flour. Set it aside to let it cool.
Slice the chives into 1 cm (1/2 in) pieces.
Heat up 2 teaspoons of oil in a wok or pan over high heat.
Add chives and soy sauce. Stir quickly and remove from the heat.
Test the dough to see if it is too sticky. If so add more tapioca flour.
Pinch off a small portion and roll it between your palms into a ball 2.5 cm (1 in) in diameter. Use your thumb and index finger to thin the dough into a flat piece. Put one tablespoon of cooked chives in the middle, gather the edges and squeeze them together to close the dumpling. Thais tend to work it until it looks like a pancake.
Steam the dumpling for 5-7 minutes or until the dough is cooked. These dumplings can also be pan-fried or deep fried.
Dipping sauce (Nam Jim Gui Chai)
2 tablespoons vinegar (Asia type)
2 tablespoons sugar
1 teaspoon soy sauce
1 teaspoon dark sweet soy sauce
This is... this is... this is... fantastic. Fantastic. How about soft-cooked scrambled eggs waffled with bacon? Two big chocolate chip cookies with something else between them? The utterly magnificent sous-vide pork shanks (that we ate - finally - last night), pulled from the bone, shredded, and topped with smoked Gruyere?
Glad to see you having fun... did the waffle maker survive??
1. Happy Birthday Chris!
2. Maybe this could be the new mise en place video?
3. I could never justify the purchase of a waffle maker, now......maybe. But would need to hire a cleaning crew. :-)
4. Waffle this weekly video......I can see it now. :-)
great fun!
Potato Pancakes (the packaged kind - Carmel Kosher of Manechevitz - are relish. But the waffle iron must be very very hot and have plenty of fat.
Pizza... must try pizza...
The worst video from you guys! What happened? Got bored or what?
Which waffle machine is this? My twin daughters love this video the most out of all the ones they've seen on your site - gyoza is one of their favorite things, and I was just informed we're doing this tomorrow for breakfast. Yay. I have a bag of uni in the freezer I might play with after they get dropped off for school...
Inquiring minds want to know.
An excellent example of "how to play with your food"... Right on!!!
Looks like it may be the "Waring Pro WMK600 Double Belgian-Waffle Maker"
This seems to me like the culinary equivalent of the wood chipper episode of Malcolm in the Middle.
This is frat boy stuff...good party.
Happy birthday.
Actually, I thought the cake looked great, but the icing ruined it. The cake would have been good with just powdered sugar on it and would have tasted terrific. I'm going to have to try that!
HAHA "I only know how to sous vide"
I want to see more stuff, there has got to be more things you can wafflefiy.lots of Bacon maybe? With some scrambled eggs?
Love how much crazy fun you guys are having and how you've become masters of high-low.
Awesome! Made my morning, and me late for work! "It's still gluten free" Ha!
Waffling! Best ever!
Love putting stuff in my waffle iron. One thing, you don't have to smash it closed completely to get a great walled item. My favorite is to make some paté choux and add shredded cheese, then pipe it into the waffle iron. Amazing cheese puffs. Or make the pate choux sweet and add cinnamon and sugar, churros without the deep frying!
I always thought a waffle was something sweet. What a fun-great-messy-delicious way to iron the food. Thanks for sharing it guys!!!
So much fun to watch first thing in the morning. You guys are amazing. But.... a processed cheese slice?
and those cake boxes? Never thought I'd see instant stuff from you guys. But the end results looked awesome. Im thinking one of your brioche buns with some awesome ham and gruyere, would elevate the Croque Monsieur to a whole new level. Loved the messy kitchen! There are days when I experiment with new recipes, that mine looks just like that so I don't feel so bad anymore.
You are all great!
I think you are right. That's the one I have. We love it.
brilliant ideas Andy. Goes to watch pate choux making videos. Ummmm churros.....
Pretty much all chefs have a solid soft spot for junk food... lots of it gets eaten in the back of the house of the nicest restaurants in the world.
I am thinking mochigome too...
Boy have I got something for you: https://www.youtube.com/playlist?list=PL1g3MXAZto6KukrudNbw4ifK4LR5wr_KN
They get bitfched out for being too serious and they get bitched out for having fun,. The
Chefsteps Chefs just cant win no matter what they do
I believe it's the Waring Pro WMK600 Double Belgian-Waffle Maker
What was bad about it?
It is and that's an important point. Its a Belgian style waffle maker. It makes waffles with a deep wide pattern unlike the finer grid made by American style waffle irons. I don't think you could make much of what's in the vid with an American style machine.
