Hey Chefsteps. This seems like the perfect simple way to create foams. Is there an alternative to Versawhip? Like Xanthan and Lecithin? I have trouble finding this in Europe. And can you alternate the ingredients as you wish? Thanks for a great site and endless cooking knowledge. Regards from Denmark - Mads

I have had good luck using liquid soy lecithin at 0.6 up to 1%, it may not be quite as stable but it works.
Tried this recipe, but didn't get any foam from the soap dispenser... only fluid. What could the problem be?
I'm pretty sure soy lecithin can be your substitute.
Tip: use hand bladder to whisk it into a foam.
@Christian Grass did you use a dispenser that foams the soap?
