No love for the vegetarian meal? What are some good vegetarian entree ideas for sous vide? I love the idea, just need to know some good jumping off points for applications.

People belly-aching about the quantity of meat related recipes v. vegetable recipes are totally missing the point. Sous vide cooking does a fantastic job with some vegetables (ChefSteps asparagus recipes are amazing). However, oven roasting and steaming are superior ways to prepare many vegetables - so much so ChefSteps provides these amazing recipes as well. Meat on the other hand is where sous vide is truly magical. The ability to safely cook meat to a point where the flavors can be fully released without overcooking, then finishing so the meat does not look anemic makes an incredible difference that you simply can't do using other cooking methods. So go make yourself a ChefSteps asparagus recipe, paired with a ChefsSteps salmon fillet, served over a ChefSteps sweet potato puree. Vegetarians are super-cool, but being a carnivore has mind-blowing perks.
