the new macaron recipe is a killer! oh i love that pistachio butter just from the looks, got to try it but difficult to find a conche! is there any other way instead?!
Does this technique replace your regular macaron technique which has never failed me.
Hi Judy, definitely not a replacement, just another option. We've found that with pistachios and the Italian meringue technique, it was slightly more difficult to get a perfect cookie, so we use French meringue for these. We hope you enjoy if you give it a try!
How interesting! I found issues with pistachio flour using Italian meringue but it didn't occur to me to try a different meringue. I thought it was... I don't know, just macaron foibles. I will definitely try this one.
