I have the sam, but 1L version. You can use either CO2 or N2O charges, they are completely interchangeable, without any problem! I just tested it. Awesome!

It's not locked on. It sits on the perch with an interference fit. You can remove it if you want but there's probably no reason to.

i have few CO2 cartridges since 8-10 years ago, they`re in perfect condition i mean they look like new, should i use them or i better throw them away?

Do you need to realese the pressure after every charge I've looked at so many recipes and it's never made clear.
You leave it fully charged until you have dispensed what ever product is in the ISI.
I'm not sure I'm charging my new siphon properly. When I hear the hissing noise when twisting the cartidge do I stop and wait for it stop, or do i keep turning?
Fully turn and get it locked in quickly to ensure all the charge goes into the siphon. If you are having hissing around the neck that would mean you might not have the o-ring seal in the neck properly.
