I love baby beets, I roast them hole with the greens , when there done just give the bulb a squeeze and the skin slides off , olive oil and pepper . Yum
I agree, roasting beets (baby or not) is the best way to get the whole beet flavor. I am going to try to cook them Sous Vide sometime to see what happens. But for us, our beets well never be simmered or boiled (even with the aromatic recipe here).
