You aren’t reading the recepe. Braise in pan and place under pig while cooking to catch the drips

Beginning of the recipe says it's "all about that second approach": "barely [cooked] at all," "so they remain dense and refreshing." I would assume they mean to keep them from the oven, and when roasting underneath meat for flavor, only keep them there for a short time so that they retain their crispness. Hope this helps some of you!
