Out of interest do you make a dressing i.e. combine the oil, vinegar, oil and salt? Or do you just add them on seperately?

so you dont core the apple? Just slice it down from the top through the stem and the core? How about prepping the fennel bulb? Trim the stalks, slice crosswise?
I'm making it tonight and will probably get as big thin slices as I can, without the core.

Perhaps a touch more fennel than apple for more balanced taste if the apple is sweet.
The ingredients recommend to use either Granny Smith or other tart green apple. However the picture shows slices of red apples.

excellent point. I've found that this is typical of many of the recipes on Chef Steps. Not properly reviewed internally. Trip ripping a fennel bulb from above through a mandolin without prepping the bulb. Not doable.
Finally got my 6 year old to eat some veggies! Excellent dish!

I have made this three times now and love it. The best part is that if you have small mandoline it's EASY. The fennel is the only thing that is not a pantry staple for me.
Why don't they specify why Granny Smiths are not an option?
What do you mean? Granny smiths are their preferred apple for this recipe.

I made this with goat cheese, citrus chicken, and avocado dressing. Yum.
This was added as a suggesting in case you found yourself at the grocery store and granny smith's weren't available OR if you're at home and have all ingredients except for granny smith's but you had another tart apple in stock.
Very new to this method of cooking - just made chicken breast - so delicious and moist! looking forward to trying these recipes!

This was delish! Made with the carrot purée and sous vide chicken recipe! So good! What a great combo! It's going into the weeknight rotation folks! Felt a little fancy too! Nice!
Made this tonight with some chicken breast and pureed carrots. Really good all the way around. I think next time I will serve this salad on the side, rather than presented on top of the pureed carrots. It made for an awesome presentation though.

Hey Margaret, Sorry, that was an error on our part. We try to point to recipes that are similar to what we highlight in that section of the newsletter. It's not meant to be identical to the one described, and we absolutely could've done a better job making that clear.
Fast, delicious, refreshing -- and it just so happened I had recently taken advantage of a COSTCO pork belly sale and it was a spectacular accompaniment. This will become a part of my rapid rotation recipes.
