This sounds like a very nice but also a very "dominating" salad/side dish, to what will you serve this? What protein/main course will it not kill tastewise?

well as you perhaps know I will trust ChefSteps with almost everything, and this configuration must be a do-try then
I tried it just as mentioned here but to me the onion seemed too dominant, after a few bites it became too hot... could it be that there is 100g too much in the recipe? I will try it again with less onion and not alone next time!
I did a quick pickle (15 minutes) on the Red Onion to take some of the bite off (http://www.bonappetit.com/recipe/quick-pickled-onions) and that helped balance out the flavors. We did the cauliflower puree and sous vide salmon with it and it was fantastic.
If I wanted to use dried kidney beans for this and cook them myself, how much would I need?
You can also try rinsing the diced onion under running water. It helps remove a lot of that raw "bite".

No. This recipe call for fresh onions and not a quick pickle. The olive oil & lemon would be enough to help take the "bite" off.
Tip... rinse the finely diced onions under cold running water before adding to the beans.
