can you marinade your pork overnight or will that screw up the meats texture? i am cooking whole hog and would love to make mojo injectable not sure how to approach it. yet please advise.
It would be fine...only cut it could mess with is the tenderloin.
Any recommendations for a pineapple replacement?
as pineapple contains enzymes that break down protein, I wouldn't marinade for that long, if its slow cooking/sous viding then it will have enough time to penetrate the meat

Could you use this with Fish? I probably wouldn't marinate it; I'd just throw the marinade in the bag and sous vide the fish
Has anyone made this with crushed fresh pineapple? I, scared the enzymes will turn meat to mush in 9 hours time.
This marinade didn't have as much flavor as I wanted. I rubbed it in pork loin and cooked sou vide but the flavor was weak. I had to add some salt to get some sort of flavor.
Way different than traditional Cuban Mojo.
I would suggest making punctures in the meat and pouring marinade into punctures to provide more opportunities for flavor to get into meat.
