but it's really whatever you want to put in it, and you can use it for whatever you want: gravy, jus, a stock, etc.
Usually I really like your videos but this was a frustration...1st time breaking down a very large turkey... Seems you do not mention removing the neck... by cutting through the back(?). (Looks like the neck is already gone in the video)
You don't talk about the joint at the big shoulder(?) when you remove the airline breast from the back.
How about the ribs from the breast... no mention...
