Does the alcohol(everclear) come out flavor wise in the end product? Also the co2 chargers do not have the grams listed in the details on amazon. Is there a certain amount I should look for when purchasing other brands?

I can't get ever clear here in australia. Am i able to use a standard 40%ABV(80 Proof) vodka in its place?
at the end, if you turn the whipper upside down, won't the soda exit from the dispeneser rather than taking the top off and pouring it (much like it does from a seltzer bottle)?? Is there any problem with doing that??
Before pouring you vent all the pressure from the container, the soda itself has some pressure still, but it would pour very slowly. Opening it up and pouring just gets the job done.
I am not totally positive, but I believe that is too low ABV for this application. Though it may still work and just take longer. You are essentially making a tincture, and the higher proof is needed to get everyone playing well together. Looks for absolute 100 proof if you can, that is normally sold in places you can't get grain alcohol.
You find this a lot in citrus foods, it enhances the tang flavor.
Why did you release the first charge? I have a soda siphon, would I need to make any changes to this recipe for it to work?
Is it correct that you use Everclear as a basis for the flavouring (essential oil) tincture so that it can form a lasting emulsion with water? Would it be possible to use gummi arabicum instead? It may server the same purpose.

The first charge is released to completely clear the siphon of air If you don't do this, then the C02 ends up carbonating the air in the siphon, not the liquid.
