It’s way easier (and just as delicious) to use raw, fresh jalapeños, stuff them, cook them sous vide 160/1 hr, then broil for just a few minutes. No crunchy breading, but.. so what? I wrap mine in a thin, fatty salami after stuffing with cheese and before putting them in the bath, and they hold together perfectly.
I prefer my order of stuffed Jalapenos to be stuffed with crab meat, chopped up shrimp combined in a bread stuffing , then battered and fried. Served with slices of lemon and plenty of real tartar sauce. These were the first way I tried them and now no cheese stuffing is even half as good.

So I made these Poppers for Superbowl yesterday and since I live in germany and couldn't find any pickled whole jalapenos. I used fresh pimientos de padron instead and put some minced pickled jalapenos in the stuffing. It was very delicious. Also I mixed up some of CS homemade ranchdressing to complement and that was a big hit, too.
Great addition to these poppers is the inclusion of a little smokie sausage inside.
It's obvious in retrospect since the actual cooking time is only 45 seconds or so, but if you just sub fresh jalapenos and follow the recipe as written, you end up with chomping down on raw-but-slightly-warm jalapenos in the end, which pretty much dominates the eating experience. Ours didn't come out particularly spicy, either, despite adding some red pepper flakes to the filling, maybe due to water mass in the peppers that hadn't been cooked/leached out. Anyway, definitely cook the peppers separately first to soften them up if fresh is all you have. Otherwise, everything worked great.
I like this. Id like to try and chop the jalapenos, mix them with the filling and pipe them into spring roll paper and fry. Thoughts?!
