I hope nobody has the expectation that "Champagne vinegar" is made from Champagne. One company markets "Champagne" vinegar because it is located in Reims, which is in the Champagne region of France. But their "Champagne vinegar" has nothing to do with Champagne wine.

What if I hate dill? What can I use in its place? I'm thinking I just might use basil instead of the dill/tarragon mix.
Unexpected that you are suggesting to use a blender. Traditional pesto is done with mortar, have you done any comparison on how the processing method can influence the result?
