They won't hold their structure well if you go much longer than 30 minutes
Might cooking in an unsealed bag that is open at the top and clipped to the side of the pot not eliminate the problems with Archimedes effect sealed bags for veg? A Sans Vide approach would allow gasses to leave the bag and not float it, while Archimedes effect would keep it submerged.

It would result in a slightly higher electric bill.
Why wouldn’t you toss the spuds in the oil garlic and salt first and then put them in the bag? Seems they would get a better coating.

After cooking as described then refrigerated on Day 1, can the sweet potatoes be reheated on Day 2 to a sub-90 C temperature, say 70 C, and held for a spell without effecting the texture?

ok, this recipe is a bit ridiculous. 10 mini in the microwave with skin and just eat the whole thing. It's much better for you and you get all the fiber. Plus you don't have to waste a plastic bag and you save 35 min cooking time.
True, and I'll leave the skin on in this recipe tonight and see how it goes; however, although you lose less nutrients in the microwave than by boiling, you lose even less with sous vide.

What do you mean " Pop them into a curry"? Mixing with curry powder or something else. We sometime call anything that is not a rice dish a curry dish (no curry powder used at all). Thx!

really great for cooking leftover veggies before they go bad and can keep for a few extra weeks in the fridge if needed!
How thick are these half moons? I tried both 30 minutes and 20 minutes and it all came out pretty mushy.
that would be delicious but I do recommend adding some salt and pepper still!
