Though I would eat it all, meat + lentils + green beans looks more like a protein bomb, than a "balanced meal".
Maybe I am being picky, but I miss the pre-"let's sell some joules!" era...
Of course, instead of cooking your beef to 140F, one *could* just have 2 Joules and cook the beef to a more civilized 125F or so and then do the chicken/pork at 140F. Just saying.

You mean when they were recommending all those other sous vide machines? Chef Steps loves sous vide, and they always have. You can see it in the older stuff where they talk about people complaining about how they sous vide everything. I don't see that anything has changed; rather than a sponsored sous vide machine, they have their own. And there's nothing wrong with that.
A breakdown of macros would be appreciated...or, if you want to get super fancy a shared recipe/meal in MFP or some other tracker

It's very protein-heavy, but of course you can change the ratios yourself. My initial thought was 'Why not sous vide the green beans?' My family loves sous vide carrots. But yeah, they do 'feature' the Joule a lot, maybe too much.
Should the meat be cooled in an ice bath?
