Supposed to be high quality food not a pack of Doritos! c’mon how can you put your name to that? Nasty stuff no place in fine dining period, use the best ingredients available not chemically addictive crap...
MSG is used to develop flavors. Certain people can be sensitive to it but it's mostly overblown like "gluten sensitivity" (which most people don't have but plenty imagine they do). They could soak some Kombu to make the same thing. It's found in nature, just like salt. Fine dining? You don't know what you are talking about (or probably what you are actually eating when you go out for "fine dining").
I find this is the same when people start in on nitrates.
There are more nitrates in a large spinach salad than there are in a whole salami.
Buzzwords that people panic over, "gluten", "MSG", "nitrates" it goes on and on.
We as chef's have spent most of our working lives trying to educate our customers, sometime you feel like you have been beating your head on the wall.
There are also quite a few "Chemicals" used in Dorito's that are used all throughout this site (Maltodextrin comes immediately to mind)... Sounds like you may have a cognitive bias towards MSG and not other "chemicals"? It's good to have an open mind when going this far (chef steps level and beyond) into the hobbiest territory of cooking. I would also argue that Sugar is by far a more addictive "chemical" with far worse consequences than MSG can ever hope to be. MGS is not the enemy here... also - just like sugar, there are substitutes .

Any water in this glaze recipe? Maybe I missed it. Recipe says about a cup.
Anybody try it? How spicy/hot is it? We like spicy food, but what is spicy is such a individual like.
I think it works. By the way, you can take this Gochujang reipe to make Korean foods more delicous.
