I'd guess cherry wood.
May use huckleberries rather than cherries.....
No elk handy, but I am making this sauce asap. Is there any reason it wouldn't work with cranberries. I could always add a dash of honey if it was too tart?
If you are going all in, wine barrel staves would seem to go perfectly.

doing a rib loin. Its a lot smaller. Should i still do the 24hrs?
What is really the point of such a long cook? Elk loin is usually super tender and long cook times tends to bring out the slight livery flavour out of wild game meat? That has been my experience with deer/moose and reindeer meat. I might be wrong here and would love to be corrected. I'm not trying to be a smartass...
